My recipe for tender chicken and potatoes infused with fresh herbs, tomatoes and kalamata olives is quick and easy to prepare and sure to become a weeknight favourite!

Ingredients 2 boneless skinless chicken breasts 1/2 cup chopped kalamata olives 1 diced tomato 1 small onion sliced in thin rings 3 medium red skinned potatoes, scrubbed clean or peeled 3 cloves minced garlic zest of one lemon 1 Tbsp chopped fresh rosemary 1/4 cup low sodium chicken stock 1 tbsp extra virgin olive oil 1/2 tsp salt 1/2 tsp pepper

Directions Mix all ingredients except the chicken together in a medium bowl. Place each chicken breast onto a 12 x 12 piece of parchment paper and spoon equal amounts of the olive, potato mixture over both. Bring edges of the paper together and fold together to crimp closed. Be sure to leave some room inside the bundle for heat expansion which will happen as the chicken bakes. Bake at 375 degrees F for 40-45 minutes. Serve rustic style on a large plate. Garnish with fresh parsley.

  • Looks fabulous, Lyndsay! I agree with the others, a little feta over top would be perfect! Great concept of baking in parchment, I've never done that. (I can't wait to see the new kitchen, and I love the Keurig in the back, it's a hit at your house?)

  • @bujigard I bought that jacket as a badge of honour because I ran in the GoodLife Fitness marathon this year. This was a full circle moment. I began on a health journey last year with the intention of running again and now I run 45 minutes every day :-) Part of my joy in the kitchen is being able to come up with really great recipes that are also healthy. Thank you for your comments - they really mean a lot to me.

  • Oh yummi hun! I'd add feta (because my family trys to get it in anywhere they can, lol) and use garlic and chilli olives. What a wonderful idea, thank you for the inspiration :)
