@stillinlovewu Thanks for the compliments! Unfortunately there is no great substitute for the locust beans. You could omit it if you don't have it available or try Douchi which is a Chinese version of the African Iru (Locust Beans. Douchi is widely available in most grocery stores. With regards to the amount of peppers... it does not give as much heat as you would think. The extra pepper adds to the flavor and not heat. Enjoy!
