meh, this fried rice is terrible, the rice sticks in clumps, it isnt tossed to ensure all round flavour, you add the egg LAST so its fresh and smooth, and you dun put soo many soy sauce until it turns to shit brown...

@philipmarie1854 Most likely because for easier cooking, the mentality of putting everything in and then mixing it is popular in the west. Chinese cooking is very timing dependent, similar to baking, you need precise timing and temperature to make quality food, so by adding the egg last, you get a smooth texture instead of rough rubbery salty bits.
