Forget Paella. The new Spanish cooking is all about unusual combinations and intense flavours. Take goats cheese ice-cream. Or foam infused with vegetable aroma.

"What is happening in Spain is really a revolution", states one food journalist. It's been happening in Spanish restaurants for over a decade and now, these trends are spreading worldwide. But traditional Spanish cooking isn't about to go out of favour. "For me, cheese will always be cheese and the aroma of vegetables is just an aroma", states chef Lucio.

  • Maybe is not what they think in the S.Pellegrino World's 50 Best Restaurants in London.

    1st one Bully (Spanish) and another 3 spanish restaurants are under 10 best restaurants in the world.

    Maybe is just that you don´t know spanisch food enought.

  • well I have ate Italian food and the only thing that they are know for is Pasta. That is why Italian food sucks I like better Spanish food
