It depends on what look you want. Having it on the very side will produce longer, depthy, dramatic shadows where the overal fruit is dark but has sleek contrasty highlights. Having the flash straight on will produce no shadows (very flat image) and might not even work because the tank glass might just reflect/bounce all of the light back into the camera. If you have it at a 45 degree angle, it will be somewhere in the middle. The main light I was using was the one on the side at 45 degrees.
