I very heavily seed my lettuce bed. Then when I go and thin out the bed I have a lot of wonderful little lettuce microgreens to put in my tossed salads.
Nice, we have a large garden that allows us to let a row bolt/ go to seed and we collect for the next growing season. Just let them flower and dry to a white fuzzy and harvest seeds. Some other types will grow pods which is even easier.
