  • make sure you cut with the grain of the meat, that will keep it from crumbling as much and maybe try some honey in the marinade. I had the same problem with mine. and yes crack the door of the oven. good luck

  • do you leave your oven door cracked? ive heard of people doing that.

  • no.. fat makes jerky go rancid because it wont dehydrate so its got moisture which spoils the meat within a few days..

  • I'll bet your dog loved that. I had a batch come out like that but I still ate it and it was good.

  • the problem was the length of time. if it cracks, its too dry. It should bend and crack a little bit but not crumble. If you raise the heat above 170 then the meat cooks and it tastes bad. Quarter inch seems a bit thick, takes a while to dry.

  • leave the fat on, thats what holds the jerky together.
