@masterfly I don't know when I went to cooking school in Norway, teacher uesed only york egg when they do deep fries too, But It wouldn't hurt if you use white egg too. when you wip white egg, you push air in it right?, So if you doesn't want your food to be puffy and big , so you don't need white egg.
