I'm having this exact problem. I can keep. mounting a guy and he does this same defense and waits for me to do something like the arm bar so he can escape. He makes no attempts to escape before that. Any recommendations? I saw the knuckle choke, so that's one I will try to add.

true countryboy, but i beleive most people would wait for their opponant to tire/settle before attacking subbmissions from the mount as it is such a dominant position. in which case their attempts to 'power out' could quite easily be stopped.

Yeah lets never try the move because it can be countered. While your at it you may aswell forget all techniques you learned that have a counter, and see what your left with.
