I'm using aperture 3 for my photography and seem to have the same problem as yours.
the only time that you can view your adjustments is when you adjust it then quit the aperture so when you open it again use the Quick View and that will not change your adjustments.
although i know it doesn't worth looking at your own shots with quick viewing still i consider it a bug. whatsoever i can't trust to aperture.
but, are there no solutions for this bug??
