This is an awesome hotpot dish only found in Soc Trang. It's a tart and sweet seafood stock. The fish is deboned and marinated in vinegar and rolled in roasted rice power. It is then wrapped in cabbage and vegetables and dipped in the stock briefly before eating. You could also just toss everything in and fish it out.

  • The vinegar semi-cooks it, like ceviche. Even so, sushi is eaten raw mostly.

  • Is that raw fish? I would think you'd need dip it longer than a few seconds in the boiling water.
