  • there's a lot of alcohol in this lol

  • Nice, but you can cook the onions for at least an hour (I've done it for 2) on a very low heat and see them caramelise evenly from the inside out, you get a great sweetness an flavour that develops the longer you cook them until they are a deep even brown goo and you add the stock.
