There's an error in your explanation of dorian. If you're in E major and you want to play E Dorian... surely there's no G. You explain that you move the E major scale down a tone so that you play E as the 2nd note in the scale and then play the same scale shape as previously you get a G as the 4th... But there's no G in the key of E. Am I right or am I confused still!!!

You're confused, all dorian scales are based on the major scale (ionian) that is a whole tone down from the root of the dorian scale, so take the scale D dorian, the root is D, go one whole tone down from the tone D, and you get C, so the tones in D dorian are the tones used in C ionian (C major), really D dorian is playing the notes of C major, but starting and ending on D, defgabcd. SO E dorian, would be the notes of D major, starting on E, so E f# g a b c# d E.

When some one quotes (I am in the key of E or E Major or what ever note) they usually mean the Ionian mode. So if you take E Ionian and want to turn it into E Dorian you could just b3 b6 b7 from E Ionian making it E Dorian in the key of D Major.
