Korean Food: Cold Cucumber Side-dish (오이 냉국)

Main Ingredients : * 2 Cups Cucumbers * 1½ Cups Water * 1½ Tbsp Green Onions * 1 tsp Green Hot Pepper (Optional) * 1 tsp Red Hot Pepper (Optional)

Seasoning Ingredients : * 2 Tbsp Brown Rice Vinegar or Apple Vinegar * 2 Tbsp Sugar * ½ tsp Salt * ½ tsp Soup Soy Sauce * ½ Tbsp Sesame Seeds

Yield: About 1.5 Quarts

OMG thank you so very much! I never even knew a cold cucumber salad existed. I am having a very little dinner party for my sister's fiance for when he comes to the house and I am going to use only your recipes. The Korean diet is one of the best in Asia. Chinese use too much oil, Japanese, not enough food or lack of protein, Korean diet is balanced all around a balance of fish and meat, but lots of vegetables. I lived in Korea and I miss the food sorely.
