Yup if there's one thing i admire about the Japanese, it's how much they care about preserving their culture. I just don't like the way kandagawa and the ohta faction put morimoto down solely based on the fact that he innovates. But i do find some of morimoto's creations a little too exotic to be even called neo-japanese.
You but Japanese place high importance on tradition. For anyone to achieve perfection it comes through repetition. This can be seen through out their culture like Tea Ceremony and Martial Art kata...while innovation leads to different invention there is nothing wrong with making something perfect that has been done for generations
That guy disses everything Morimoto does but if you never change, you'll never improve. That's their problem, they stick with their traditional recipes. But improvement comes through innovation and invention.

have, he owned sakai in octopus battle, but if they using another ingredients i bet that sakai win
