1 cup Quinoa
1 tbsp butter
1/4 cup red onion, minced
2 garlic cloves
2 tbsp hot chilies in oil, with 1 tbsp of oil
1 cup fresh spinach leaves, washed and chopped
1/4 cup canned beans, e.g. black beans or chick peas
10-15 stems (+leaves) fresh cilantro, chopped
1 tsp lemon rind, minced
1 tbsp fresh lemon juice
1. Bring 2 cups plus 3 tbsp of water to a gentle boil (everyone hates an aggressive boil) and add quinoa. Turn heat down to low, cover pot and let simmer for 15 minutes. Let cool for 10 minutes.
2. In a medium pot or frying pan over medium heat, add butter. As soon as it melts add onions, garlic and chilies with their oil. Let fry on medium heat for 4 minutes, making sure the garlic never burns.
3. Add spinach and beans to onion mixture. Fry for 3-4 minutes or until spinach breaks down.
4. Add lemon juice, rind and fresh cilantro. Mix well and take off the heat. Add quinoa and stir to combine. Enjoy one of the tastiest and healthiest salads you'll ever eat
Serves 4-6 as a salad
