    Followed this procedure with an electric smoker and it was delicious! Excellent when smoked with apple wood chips.

    Mayo? Ughhh. A little oil *if* needed. Using latex gloves will help the rub adhere. The flavor from the mayo or mustard will dominate the bird.

    I was surprised at the lack of moisture in the smoker. I either do beer can chicken or have a soup can with broth, apple cider vinegar and soy sauce to keep the meat moist. Also, not much if a dry rub, seemed a bit light for me. When sliced, it looked cook nicely IMO. The smoker itself looks built well and easy to operate.
