Yields: 6 to 8 servings
Ingredients:
1 mango, peeled, seeded and chopped
1 peach, halved, pitted and cut into ½ inch cubes
2 tomatoes, chopped
½ cup red onion, diced
½ red pepper, diced
½ yellow pepper, diced
½ cup fresh pineapple, diced
½ cup cilantro, chopped
1 tsp. minced garlic
1 tbsp. lime juice
½ tsp. salt
1 tbsp. sugar
1/3 cup water
Preparation Directions:
~ In a large bowl place mango, peach, tomato, peppers, pineapple and cilantro. Toss to mix.
~ In a small bowl whisk together garlic, lime juice, salt sugar and water. Pour over fruit mixture and stir to mix.
~ Cover and refrigerate at least 1 hour before serving.
