@theoutraged I'm a barista too and while I think the taste is okay with what you get, I had the same problem with a quick flow on my BES820. If you replace the dual wall filter baskets with a non pressurised one (51mm) which you can buy off eBay or from other online sites, it easily rectifies the problem. Also check the grind/freshness of your coffee. Brevilles are very unforgiving in that you have to use a finer ground coffee tamped correctly. I would also recommend buying a proper tamper.
Well, I use the exact same machine. Generally I am pretty satisfied with it, I've been working as a barista for quite a while and thus I manage to create pretty nice espresso based drinks with it. However, it doesn't mean that the machine doesn't have downsides.
The small basket, the impossible to find matching metal tampers, I am not even sure yet what is the exact portion to use, I more or less guess by the flow, having a really amateur grinder doesn't help either. I never reach 21-25 sec tho
No matter what the coffee connoisseurs say, if you just like a latte or cappuccino every now and then, the breville pressurized filter works just fine, the shots in this video go pretty quick, most likely because the grind or tamp is not right, especially because it has to be perfect when using a non pressurized basket, which makes it a lot easier to get a clean shot from a pressurized one from someone who is not an expert on espresso. But anyways, yes, the unpressurized filter is Krups 0907163
I dont think the beans are fresh enough. Illy tins tend to go stale after a day of opening =). The shot just looks too 'fluid'. Did you try it straight as espresso? Im pretty sure it would have been sour.

The only problem is that you need to buy yourself a better grinder.

here's a tip: u see how the shots end up uneven? one shot's more than the other? you're tamping isn't that level.
