the best way to make them is actually to refrigerate them for at least 2 hours after washing them out. make sure its refrigerated in a bowl full of water.
then, fry them once. once they start to turn a little brown, take them out. let it cool now. fry it again, and you have perfectly crisp fries. EVERY TIME.

I add the salt to the oil as they fry away. seems to impregnate them with the salty taste better then just adding it afterwards. i also add black pepper at the same time. good video.

why do you freeze them? I don't freeze mine and was wonder what difference it makes.
does it matter if u leave teh skins on? whats the taste difference?

@tanory07 No, it does not matter whether you leave the skin on or not, they are great both ways. I would try it both ways and see how you like them.

Something you might add: if you par boil the fries before you fry them, they'll be fluffy inside and crispy outside.
I notice you use Tony's in one video, Annies's bbq in another, have you considered truly home made? Both Tony's and Annie's are easy to make up yourself and for considerably less.
