【材料】:豬腳2斤、花生麵筋1罐、蒜頭8顆、蔥2支、香菜1株、大豆苗1包、薑1塊、醬油6大匙、米酒1大匙、冰糖2大匙、胡椒粉1/2小匙、香菇精少許
【做法】:
1、將滾水加入薑片和蔥段,放入豬腳滾約5分鐘,撈起洗淨備用。
2、蔥切段備用,醬油、米酒調和備用。
3、取一深鍋放入沙拉油,加入蒜頭、蔥段炒成焦黃;。
4、放入冰糖炒香至茶色濃稠狀,加醬油與米酒、6碗水滾開;
5、放入豬腳、胡椒粉、香菇精以及花生麵筋,蓋上鍋蓋滷約1個半小時。
6、打開鍋蓋將大豆苗放入悶熟後取出,與豬腳一起排盤,放上香菜即完成「麵筋滷豬腳」。
【麵筋滷豬腳沾醬做法】:將1大匙蒜末、3大匙醬油膏、1大匙的糖、1大匙的辣油以及1大匙的香菜倒入碗中,充分攪拌均勻,就完成了醬汁。
