Spinach quiche w/ asparagus, red pepper, and corn

2 bundles asparagus, skinny stalks
1 red bell pepper
16 Oz. frozen chopped spinach
18 eggs
2 Lb. sour cream
8 Oz. extra sharp cheddar cheese
4 frozen pie shells
dried rosemary (crushed into powder)
a pat of butter
a splash of merlot

Pre-heat oven to 350 F.
Bake pie shells for 5 minutes - set aside.
Halve pepper, discard seeds, brush halves w/ olive oil, place in glass baking pan.
Cut tips off asparagus, place in pan with peppers, drench in olive oil, place pan in oven. Slice tender part of stalks very thin, discarding butts - set slices aside.
Thaw spinach in microwave & drain, squeezing dry-ish in sieve.
Check pepper & asparagus tips, and remove when done. Asparagus will be ready first, in about 7-10 min. Peppers will take longer, cook until skin (of the PEPPER) begins to blister.

Melt pat of butter in frying pan at medium heat. Add powdered rosemary, simmer for a minute. Add some splashes of Merlot or any red wine. Add asparagus slices, simmer until wine has reduced onto slices. Set aside.

Grate cheese, set aside.

Remove peppers from oven and dice.

In large mixing bowl, mix eggs, sour cream, cheese, asparagus, peppers, corn, spinach and any other ingredients you have decided to include.

Ladle even amounts into the 4 pie shells.

Place in oven, bake for 45 minutes at 350 F.

After 45 minutes, rotate quiches and bake for an additional 15-20 minutes, checking to make sure you don't over-cook.

Remove from oven and allow to sit for 5-10 minutes before cutting and serving.

    The pie shells come 2 per package here. You can halve or quarter the recipe if you don't need to feed a bunch of hungry people like I do.

    The original recipe I worked from was for 1 pie using only 2 eggs. I upped the egg count substantially in order to accommodate more ingredients while remaining fluffy.

    I'm going to remove the corn as a listed ingredient, though. It was needed only because I didn't buy my usual 2nd bunch of asparagus, and artichoke hearts r a better substitution.
