what about mixing all the wet ingredients together before adding to the potatoes. Wouldn't that help not to over mix the potatoes and make sure all the flavors are together??

@9aspengold5 No. In order for this to work you need to work in layers. That way every layer of potato absorbs the right amount of oil. This salad is tedious but it is well worth the work. I promise! Thank you for coming by!

One recipe that was brought to our catering team was a mustard potato salad that has all the same ingredient as you have here as well as an add of mustard paste and to 10 lbs. of potatoes ~ would be 1/3 cup of sugar. The donor of the recipe was Pennsylvania Dutch/ German heritage. She also brought a recipe of red skinned potatoes. The entire recipe was the same as the traditional you make here but with red skinned potatoes with the skin left on. All three are excellent recipes.
