@SimplyOnTop LA Master Chorale's diction & pronunciation in their rendition was perfect to me (dunno if you've already heard it -- they're the one commissioned my Lauridsen, under Salamunovich, to do the Lux Aeterna Album). This choir sounds ok, though their pronunciation of "E" is too much of an "I." I'm familiar with general techniques in doing that, but this choirs "E" sound is just too weird to me.

Hi! I'm not a language specialist, but I suppose that the Italian way of pronounciation leans more to the way it was pronounced in ancient Rome. Our pronounciation doesn't differ much, but it differs a little bit especially the 'e' sound.
