First, I want to say that it's really interesting to see a form of Christianity that's influenced more by Jewish tradition. Really kinda cool.
I must say that there is a level of uncertainty in prophecy. How do you know that a prophecy is not self fulfilled? How do you know that the writers of the new testament were not Jews themselves, and quite versed in the Jewish scriptures from which the prophecies were derived? What if they chose to include those "prophecies" into the story?

You are correct in stating that they were Jews. The first century followers of Yeshua were mostly all Jewish people. Yes, they all knew the prophecies. But here is the issue - if you read the gospels - they promote the highest level of integrity there is. They quote Yeshua stating many things like, "For I tell you that unless your righteousness surpasses that of the Pharisees and the teachers of the law, you will certainly not enter the kingdom of heaven." (Matthew 5:20). Continued....

Tons of things like that.... all telling people to live correctly.
So one very fast issue we need to examine is do we believe these men deliberately lied together. Then they died for that lie as well. (History tells us 11 of them died as martyrs.)
They could have said - "Whoops! I lied. It's not worth it." Whenever you get a group of people lying together - usually someone "cracks". Yet they died knowing they were lying?
Also - you are then left with all these prophecies that need to

be fulfilled, yet many of them cannot be fulfilled anymore since the Temple was destroyed by Rome in the year 70.
Much much more could write, but I would have to say it is much 'easier' to believe that Yeshua did indeed fulfill the prophecies.
