As you can see in the higher speed footage, the tongue doesn't scoop up water like a dog, instead it uses the adhesion of the milk and speed of the tongue. When the tongue pulls back quickly, the tip of the tongue pulls the milk up, forming a continuous column of milk due to adhesion. The mouth snaps shut to capture the milk.
