Should it be HATACHI in the dialogue, or is NIJUU SAI also okay?

Great question!
You can use "ni juu sai" to mean "20 years old" just like in the dialogue.
*both "hatachi" and "ni juu sai" get your point across, but I recommend using "hatachi" since it is spoken more often by native Japanese.
So if you really want to impress , stick with "hatachi" for '20 years old"
*When using hatachi you don't need to add "sai" after it.
So you can say:
watashi wa hatachi desu.
(I am 20 years old.)
