Started as a kermes, a festival to raise funds for their church, this food fair was so popular that it continues nightly as a way to raise money. Everyone working there is a volunteer. The most popular stands seemed to be the ones selling enchiladas, which this video shows being made. They're street-style -- dipped in chile sauce, then fried and folded, then topped with potatoes and carrots, plus tender chile-covered pieces of chicken, too.
