If you were talking about the giant axe weapon, that is known as the Red Minotaur soul. The sword is known as Claihm Solais.

and where are the red minotaurs?

I had it when I done New Game+. You can find them in the Forbidden Area. The Red Minotaurs are in the Arena and the area where you face Graham Jones.
