Now, I know how busy we all are nowadays, and this day was one of those days for me. Worked late, didn't get everything on the to do list done, forgot to thaw something substantial for dinner. You know the kind of day I mean right?! Anyway, I asked the kids for ideas and they asked for this. Usually called baked ravioli, I like to call it Help I'm In a Hurry Lasagna. Because it is like lasagna without all the extra work. I take some help from the grocery store by using high quality frozen ravioli, I like the large round ones, cheese filled. I also use my favorite jarred pasta sauce with mushrooms. Then I just get a bag of shredded mozzerella cheese and use only about half of it. So here is what you do:

1 bag frozen good quality ravioli.
1 jar of your favorite pasta sauce
1 bag shredded mozzerella cheese.

In a baking dish coat bottom with about 1/2 cup of sauce. Line the dish with frozen ravioli and layer with sauce until you use the contents of the bag. Top with additional sauce and then shredded mozzerella cheese. Cover with aluminum foil and bake at 350 degrees for about 30 to 40 minutes. Make sure you preheat your oven, this day I forgot and it took a bit longer to bake. When cooked through, the cheese should be melted and the ravioli should be done all the way through. I made these with some frozen breadsticks and a tossed salad for a complete meal.

I had time to change my clothes and get a few other things done while dinner was in the oven and then evening with the family. I know that we all like to make things from scratch, but during the week, that can sometimes be difficult, I try very hard every day to make healthy and nutritous meals for my family, and this one is no exception, there is no meat in this meal so it is a good budget stretcher. I do like to have at least one meatless meal a week. So I hope you try this and I hope you enjoy it. Thanks for watching and Happy Eating! Noreen

  • Wow being a soldier in the Army...I might want to try this instead of going to Taco Bell and any of my other favorite fast food joints...thanks for this...Im stationed in Camp Castle,Korea and are chow hall sucks I only eat breakfast in there everything else is terrible!!!
