【材料】:白帶魚400g 、昆布10公分、薑 30g、葱1根
【調味料】:柴魚醬油1/2杯、味霖1/2杯、酒1/2杯
【做法】:
1、先用紙巾把昆布上的雜質擦拭後,放入鍋中接著倒入等比例的醬油、味霖以及糖、米酒後開小火慢煮。
2、先把白帶魚一邊先劃上數刀後,翻面同樣地再輕劃上數刀,接著把白帶魚置於昆布上再把水倒入淹過魚的一半後燒煮五分鐘。
3、等五分鐘過後,再把白帶魚和昆布的位子調換 此時蓋上鍋蓋後轉小火再燜煮五分鐘。
4、接著薑切絲、蔥切絲後泡水備用。
5、再把魚和昆布分別取出、開大火把湯汁燒開後、再放入薑絲和蔥絲稍稍浸泡接著放在白帶魚上。
6、最後等到湯汁燒乾至濃稠狀後再淋在白帶魚身上,即完成這道濃濃的日式風味白帶魚。
