The bladder from a 5 liter box of wine is the perfect fermentation cover, fill 1/2 full of water, works perfect on a 5 gallon bucket. Lowes now sells cheap food grade buckets. We beat the cabbage with a wooden beater and only use Kosher or sea salt.

Never use trash bags; they must be made of FOOD SAFE materials; also use a brine mixture, not water; If a leak occures, your cabbage will be ruined unless you use brine.

I came to this site about homemade sauerkraut and read the comments starting on pg 3 to 1 and here are maxaker67 and fetymann exchanging normal comments and then start disagreeing and calling each other names with each new comment and I cannot stop laughing. I have tears in my eyes from laughing. Like kids. too funny.

wow she's eating the cabbage core like it's a french fry. The fact that I throw away those things makes me feel a little guilty

I am using an empty olive jar to ferment.. I just press it down occasionally.. a whole head of red cabbage around 2 tblspns of salt, garlic and a few carrots, bit of extra water.. it is fermenting now around 8 days.. my kids had fun helping to shred and salt..

Totally cute! :) I am about to try it, not sure if I should do it in enamel pot before buying a crock. I am also a bit hesitant about using a plastic bucket for this.

Nice job, but I wouldn't use trash bags to hold down the cabbage. Most trash bags are treated with an insecticide to control pest intrusion. Not something you want in your Kraut. :-)

i wonder if freezing kills the beneficial stuff in the kruat .
