In this segment from Organic Living TV with the Hippy Gourmet, we head over to the Spice of Life festival in Berkeley, California and do a little farmer's market shopping - picking up some lovely butternut squash for making two versions of a butternut squash soup, one vegan and one vegetarian with sage brown butter!

    You can spell it both ways actually, "hippie" is mostly used for plural.

  • If you put butter in the soup don't call it vegetarian.Thanks.

  • In this video there are two versions - a vegan without dairy, and a vegetarian version which has butter. Thanks for watching!

  • You could make the sage 'butter' w/ margarine. Just let the sage absorb in the cooked marg for awhile. No biggie.

  • i think 40 minutes at 350, basically it's fine if you over cook it, just need to blend it so doesn't really matter as long as it's fully cooked!

  • I used to have to pick butternut squash and blue hubbards as a kid on the farm, summer squash and those zuchinnie bastards. It was tough enough doing everything else alongside on the farm,that I boycotted squash.

    Fool I was. I wonder if I will ever like beets. I have how'ed about a million feet of them bastards
