First, you need to switch off all the background dynamics, so you could seamlessly append the recorded parts later.
Then, remove the score and extra-ball bars, it could be done easily by changing alpha channel in the appropriate .tga file which are located in the Textures directory

Now, record the gameplay partially (using extra lives and spending more time since these scores are not displayed anymore)
And finally, montage the parts using i.e. VirtualDub. A simple filter would help you to implement overlays for time-bar and extra-balls :-)
