Before you attempt to set sag, you should pump shock to 100% of riders weight, ie. Joe claims 205 Lbs then you should pump the shock to 205 psi. You should remove the pump every time after you pump it and when checking sag. Another tip, you will lose some pressure when you remove the shock pump so if 205 psi works for sag then pump it up to about ~210/215. Trial an error worked for me as to how much pressure I lost every time I remove the pump.
