KAF is the abbreviation for Kreate A Fighter, a feature introduced in Mortal Kombat: Armageddon. It's sometimes also called a KAK, for Kreate A Kharacter. Just as the name implies, it allows you to make your own character, with customizations for looks, attacks, voice scheme, victory pose, etc.
There are quite a few videos on YouTube for custom characters, but I think the best KAF videos come from myself, ShiitakeWarrior, and danielortizvargas. You should definitely give our videos a look.
