【材料】:蝦仁4兩、魷魚1條、蛋豆腐1盒、豆莢10片、薑5片、蔥2支、蠔油1匙、醬油1匙、酒1/2匙、香油1/2匙、糖1/2匙、胡椒粉1/6匙
【做法】:
1、首先將蔥切段,蔥綠用刀背輕拍,薑切片備用。
2、蝦仁加入胡椒粉、米酒,抓勻醃漬備用。
3、魷魚、蛋豆腐切塊備用。
4、起約180度的油鍋,把蛋豆腐放入油炸,炸至金黃色時,即可起鍋瀝油。
5、把蝦仁炒香後,再放入薑、魷魚、水下去拌炒。
6、接著加入蠔油、醬油、胡椒粉、米酒,再放入蛋豆腐、豆莢拌炒均勻。
7、起鍋前勾芡之後,放入蔥段、香油拌炒,再放上預熱的鐵板上,即完成「雙鮮鐵板蛋豆腐」。
