This is probably the best explanation of how to make one of these puddings I've ever seen. However, finding suet is not an easy task where I live (no butcher shops here).

I got 2 large Puddings from this recipe. It also helps to put 2 or 3 tbl spoons of vinegar in the water you steam it in to cut down on the lime build up on the bowl and pan...makes clean up easier.

I made this a few weeks ago (a different recipe, with guiness) and it has been in the fridge. Can I serve with brandy and flambe and add some brandy butter?

@kidcaper007 nooo. the pudding won't hold up. If you hate raisins, use dried fruits chopped finely. apricot, pineapple, dates. But try to not omit the raisins! If it's a texture thing, grind them up to a paste in a food processor. Cheers.

@formula1update equal parts of allspice, cloves, cinnamon, ginger, nutmeg and mace. Commercial pumpkin-pie spice is a good equivalent for mixed spice. Cheers.

i actually hate raisins/currants/etc. Is it possible to substitute for other fruits, like bananas and strawberries?

If I were to make this in advance and store it for a week or so, how would I store it? Wrap it in film/foil? Leave it in a cupboard or fridge? Does it need to be sealed? (I assume so) would be great if someone could let me know... Really want to make this!
