    Hi mukwah: Yes, you can use this cream cheese, and it is going to be the best cheesecake! Very creamy. Just make it plain with 1/2 teaspoon of salt.

  • Can I use my candy thermometer?

    If I have the raw milk that still has the cream in it can I just use 1/2 gallon of that?

    Also, thank you so, so much for this vid! I can't wait to go down to my granparents house so that I can make this and use it in a cheesecake! :)

  • INGREDIENTS:

    1/2 gallon of half and half or 1 qt whole milk and 1 qt cream- Pasteurized NOT ultra pasteurized

    Warm milk to 84 degrees and add

    1/2 teaspoon of salt

    1/8 teaspoon Mesophilic M culture

    1/4 teaspoon 30% calcium chloride solution dissolved in 2 Tablespoon of water

    1 drops of vegetable rennet dissolved into 2 Tablespoons of water
