Derren Brown is a master of memorising first and foremost, he also uses various different techniques. The horse for instance, was not 'cold reading' clearly, no one can be so accurate at cold reading, the woman is a famous person, he knew she would be on the show, and clearly, he did his homework on both these women, if you know enough info about anyone you can predict there behaviour quite accurately with some simple 'nudging' in the right direction.

Of course he's a seasoned professional.
