Nice, smooth lines he's cutting. Obviously someone who understands that people buy and eat with their eyes. Too often you see tutorial vids with the cutter sawing back and forth, not understanding that the blade angle changes when you do that.

Odd Q but anyone know what swordfish tastes like? Was recently at a Japanese restaurant in my town and one menu item was hibachi-style swordfish. Just curious about taste in case I decide to give it a go sometime.
They can be soft sometimes, if they are not properly taken care of. They are not as dense a meat. It is the skin that is tough. It is like sandpaper. And yes, that is a really really sharp knife.

xavier, we have 2 retail stores. One in Mystic, Ct. and one in Groton, Ct. We also ship but it tends to be expensive. We only ship products fresh so it has to go overnight shipping.
