Cook the octopus for about 45 minutes. After cooking, leave it in the water to cool down for at least a half hour or, if possible, for 2 or 3 hours. Cut it: it's best to remove the skin because many people don't like the taste. Cut it into pieces and season it with some olive oil and lemon juice (in equal parts), salt, and a touch of parsley.
