I like the fact that you don't cook the cabbage at all. I tried making Sambharo tonight without frying the mustard seeds in oil, but popping them in a dry pan. I then added the mustard seeds to extra virgin olive oil with the rest of the dressing ingredients without any additional cooking -- including a pinch of asafoetida. It seem to work OK and I avoided frying oil.
