These wings are some of the best reasons to go on the Atkins Diet. They are completely legal for all phases of the diet and absolutely delicious. The Diet Coke is a unique ingredient, but it really does the trick. I think by adding the wings to the simmering sauce, the collagen helps thicken the sauce as well.

Ingredients
3 pounds chicken wings, separated at joints, tips discarded
1 cup Louisiana-style hot sauce (Franks Hot Sauce recommended)

1 can Diet Coke with Splenda
1 tsp cayenne pepper, or to taste
1 tsp ground black pepper, or to taste
1/2 tsp Thyme
1/2 tsp Garlic Powder
1 tablespoon soy sauce
1/2 TBS Dried Chopped Onions

Instructions:
* Cut the wings into pieces.
* Mix other ingredients into large pot and start simmering.
* Add wings to pot to give flavor
* Heat Oil to 350-375F degrees
* Add wings to fryer and cook until done (12-14 minutes)
* Add wings back to Buffalo sauce and coat thoroughly

  • Dr. Atkins New Diet Revolution (2002) P. 127: "...Everyone should try to avoid caffeine." How much caffeine is in Diet Coke?

  • @RichieEvansFan There is 2.83mg per oz or ~34mg per 12 oz can. That would roughly be 5mg per wings serving. "Avoid coffee, tea and soft drinks that contain caffeine. Excessive caffeine has been shown to cause low blood sugar, which can make you crave sugar."(p.83) 5mg would hardly be classified as excessive, and it is less caffeine than is found in the also acceptable 1 tbsp of cocoa powder (8.4mg). If you are sensitive to that level of caffeine, you could also use Diet Rite.

  • Then don't call them "Buffalo wings" -- that's misleading to people who don't know any better. And since you're adding restricted ingredients from the Atkins Diet and proclaiming it's okay for Atkins... I rest my case.

    As for misleading people, I believe you are taking your wings too seriously.

  • I'm sorry, but this is just WRONG. The BUFFALO, N.Y. recipe for chicken wings (we don't call them "Buffalo Wings," just like people from Philadelphia don't call it "Philly Cheese Steak") is: 1. wings; 2. 1 cup Frank's; 3. 1 stick butter; 4. NOTHING ELSE. The traditional wing recipe also is 100% okay for the Atkins Diet. Anything else is just "chicken with some weird sauce on it."

  • @RichieEvansFan Just like every other food in the world, the Buffalo sauce grew beyond its roots. No matter how Buffalo people like their wings, they've given up the right to determine what is correct wings and what isn't. Otherwise, there would be people picketing every single Buffalo Wild Wings restaurant in the U.S.

    Sorry you can't turn back time or keep everyone in the Buffalo bar's recipe constraints. BTW - I have tried the original, and this is much better.

  • @bobclark17 The sauce that cooked the raw wings was being kept simmering (~200F degrees) throughout the entire cooking cycle (15+ minutes), which is more than high enough to kill any food bourne illnesses.
