This making of this bread is all about technique. In Iraq, this bread would be made on an oven similar to a Tandoor oven.

Ingredients:

Mix yeast with warm water.
1 kilo flour
2 tsp salt

Preparation:

Place towel over basin and leave for 15 minutes to rise. Knead some more and then leave for 2 hours. Break into handfuls and work each piece into a round flat shape before placing on upturned wok over an open flame. When it begins to rise, turn over.

  • Hahahaha! Where there is a will, there is a way. Upside down wok, nice! However, you would have to have this on a fire for it to work. I am not even sure if a gas stove would allow this to work, I suppose it would depend on the size of the burner... I doubt this would work on an electric stove... but I wonder...

  • @yazking yes:) if you want a whole wheat u can do 1/2 all purpose flour and 1/2 wheat flour
