Cheese Potato Puff

(12-14 servings using a 10" deep dutch oven)

Ingredients:
12 medium potatoes, peeled & cubed
2 cups shredded cheddar or swiss cheese
1 1/4 cups milk
1/3 cup softened butter or margarine
1-2 tsp. salt
2 beaten eggs

Directions:
Place the potatoes in a dutch oven and cook with water.
Cook until tender. (About 15-20 minutes)
Drain and mash potatoes.
Add 1 3/4 cups cheese, milk, butter and salt.
Cook and stir over low heat until butter & cheese are melted.
Fold in eggs.
Cover and cook 25-30 minutes at 350F.
Sprinkle with remaining cheese and bake until golden brown. (5-10 minutes)
