@Jesus777Rocker blanch them in 160-170°C oil before hand. leave them room temperature couple hours. brown them in 185°C oil. (don't go over 190°C). that's what french fries is all about. english people can't talk about this anyway, they eat it with vinegar...

@Jesus777Rocker not everything is about them being crispy. if the center is overcooked it's dusgusting. fries is all about the double cooking, the soft center with oily potato. the outside crunchy and lightely brown. we have worked on fries for generations in here, and I can tell we know what french fries (chips?) are.

@cartouchator You apparently lack insight into new methods of food preperation as well as not having the ability to hear well. His method does make very crispy fries "chips". If you lean in to the speakers or use headphones, you can hear them crunch when he bites them and also the crackle of the hardened exterior when he drops them into the bowl. You should attempt to show him some respect. BTW, read up on river cottage. Rant over.
