Nope. Trays are considered tacky in "posh" restaurants. I vote for keeping four dipping areas and making them slightly bigger.

They shouldn't put the dipping areas on the outside edge of the plate. If you're dipping, it should be kept within the sunken area of the plate, otherwise it could spill over the edge.
