In this episode of iCook, uCook, we explore how to make Jamaican Jerk Chicken from scratch. From home made marinade to grilling techniques to final preparation. we compliment the heat from the jerk with a fresh mango pineapple sauce. meal is brought full circle with jamaican hard dough bread and sweet fried plantains...Enjoy and Subscribe.
How to / Ingredients:
Combine Ingredients in a blender / food processor.
You want a paste like consistency (should not be runny)
Marinade over night for best results
Jerk Batch will do roughly 6 Leg Quarters:
2 Nutmegs
4 oz Pimento
5 sprigs of Scallion
1 large Onion
1/2 to 3/4 oz Dry Thyme leaves
2 tbs Brown sugar
2 Habaneros (add more to increase heat level)
2 oz Olive oil  
1/4 - 1/2 oz Salt

  • Hey Man, i am I really like your videos and your recipes, I was wondering if possible you could add the recipe which include the Ingredients and How to in the Description box because it makes it difficult when I want to try the recipe. I have to write the recipe down as you talk and that gets tiring. I am making some of your recipes all week next week. Good Job on your videos and its great to see another Jamaican on Youtube.   • I like the videos that I have seen thus far. My only situation is that u give no measurements for those who may not know how to cook.

    Me myself I can see that u mostly measure from experience/know how which I like, Usually the food taste better that way but for those who need measurements u should consider.

    As well WHO IS THAT SINGING IN THE BACKGROUND. Luv the music!
