Sustainability is great, but organic does not mean sustainable! It just means you have the luxury to waste lots of space and time (for only in some aspects healthier food). But crop soil and harvest efficiency is acutally needed for many, many people suffering hunger!! If you want to have it organic, it is just because you think egoistic and don't give a damn for all the rest...
